Protein Power Frittata's
Ingredients
- 1/2 Container Egg white's
- 1 Whole Egg
Chopped:
- Raw spinach
- Basil Fresh & Dried
- 1 Skinless Rotisserie Chicken
Sauté in EVOO:
- garlic
- Red onion
- Mushrooms
- Broccoli rob any veggies
- Shredded mozzarella any or no cheese here
- Quinoa
- Salt & pepper to taste
Instructions
- Mix all ingredients in a mixing bowl, pour into muffin tins. Avoid over flowing and make sure to spray with EEOV so they easily pop out. Bake at 35O for 20/25 minutes or until done. To test use a fork to poke thru center.
- Pop out sever with mixed greens salad.
Notes
If you want to make a batch for the week undercooked them a little, so when you go to heat them up they won't dry out. Enjoy
