Mix all ingredients in a mixing bowl, pour into muffin tins. Avoid over flowing and make sure to spray with EEOV so they easily pop out. Bake at 35O for 20/25 minutes or until done. To test use a fork to poke thru center.
Pop out sever with mixed greens salad.
If you want to make a batch for the week undercooked them a little, so when you go to heat them up they won't dry out. Enjoy
