Ingredients
  

  • 1/2 Container Egg white's
  • 1 Whole Egg

Chopped:

  • Raw spinach
  • Basil Fresh & Dried
  • 1 Skinless Rotisserie Chicken

Sauté in EVOO:

  • garlic
  • Red onion
  • Mushrooms
  • Broccoli rob any veggies
  • Shredded mozzarella any or no cheese here
  • Quinoa
  • Salt & pepper to taste

Instructions
 

  • Mix all ingredients in a mixing bowl, pour into muffin tins. Avoid over flowing and make sure to spray with EEOV so they easily pop out. Bake at 35O for 20/25 minutes or until done. To test use a fork to poke thru center.
  • Pop out sever with mixed greens salad.

Notes

If you want to make a batch for the week undercooked them a little, so when you go to heat them up they won't dry out. Enjoy
