Watermelon Feta & Herbs

Ingredients
  

  • 10+ Slices watermelon slices
  • 1 Cup basil or mint
  • 6+ Ounces raw goats milk feta
  • 1 Container arugula sprouts
  • 1/4 Cup extra virgin olive oil
  • 2 Tbsp balsamic vinegar reduction

Notes

Toss watermelon with EVOO
Plate the watermelon, sprinkle feta evenly, gently toss.
Drizzle with EVOO
Make the balsamic reduction Pour balsamic vinegar into a small saucepan. Turn heat to medium high and bring vinegar to a boil. Once boiling, reduce to simmer and let simmer for about 5-7 minutes until vinegar has reduced down. Remove from heat let stand 5 minutes and drizzle over the watermelon.
Top with fresh basil, mint and arugula sprouts.
Salt and pepper to taste
serve immediately or chill until ready to serve
