Ingredients
  • 2tablespoons extra virgin olive oil
  • 1bag frozen roasted sweet cornboil and drain let cool
  • 4cups watermelonseeded and cubed
  • 1/4cup fetacrumbled
  • 1tablespoon balsamic vinegar
  • 2tablespoons fresh basil & cilantrofinely chopped
  • black pepperto taste
  • saltto taste
Instructions
  1. Drizzle corn with oil and season with salt and pepper. Grill, turning on occasion, until slightly charred, about 8 minutes.
  2. Remove and cool, then slice the kernels off the cob.
  3. In a medium bowl, gently toss all ingredients. Serve immediately or chill.
